can person change there mind after signing quit claim deed in front of notary in florida (keep in mind has not been recorded) ?

As far as I can understand, if the property deed has been notarized in front of a notary, then the grantor will not be able to change his mind. However, I would suggest you to take the advice of a real estate attorney in this regard.
