I bought an apartment in Florida in december 2009 for $75,000, and I want to gift it to a trust of which I am the grantor but not the trustee. What is the best way to do this ? a quit claim deed?

You can transfer your property to the trust with the help of a quit claim deed. For further information on this issue, you can speak to a real estate attorney.
