How do I add someone to the deed on a piece of property? And how do I list it so that if one dies the other is still free to sell it without difficulty

Just use a quit claim deed to add someone's name to the title, piece o' cake!

Your second question is more complicated. More than likely, you'll want to be listed, legally, as JTWROS - Joint Tenants with Right of Survivorship. This may vary depending on your personal situation and your state's probate laws. You'll need to definitely go talk to an attorney to get the right advice for this. Very important, this is something you want to deal with now, not in probate.
