If I buy a home from some one that owes back property taxes of $3000 using a QC Deed will I then be responsible for those taxes? Or is the previous owner still responsible for them?

Did you get title Insurance? You are ultimately responsible for any back taxes and liens once you are the owner unless you got title insurance. Always, Always, buy title insurance, even if you are acquiring property from a family member or friend.
