The ex wife of my husband signed a quitclaim deed to him. Does this quitclaim deed absolve her of financial responsibility on the mortgage since both were on the loan?

No, the quit claim only removes her from the title, not the loan. To get off the loan, you and your husband will need to refinance it into your names.
