My wife and I purchased a house when we were married. Now we are divorced and under our mutual agreement, I want to transfer my interest in the property solely to her. What should we do, quit claim deed or interspousal transer? Also, would this be considered a gift for any tax purposes? Would there be any taxes or fees other than regular property taxes and paperwork fees?

Hello and welcome to the forum. A quit claim deed will remove your name. I am not familiar with an interspousal transfer, so I don't know what that entails. I can't help you on the tax questions, I think you should talk to a CPA. Good luck.
