If my spouse quitclaims our house to me, can I then go to our bank and get his name off the loan and my name added?

Welcome to the forum.

If your spouse quitclaims the property to you then you can refinance the mortgage on your name only. So can you be able to refinance the loan on you name? Have you informed your lender than you are willing to refinance?

You will have to refinance the loan on your name only. So can you refinance or afford the mortgage payments? How much do you earn and how good is your credit score.

If you refinance the loan on your name the rates and terms will be changed. Was it an ARM or FRM? Have you informed this to the bank that you want to get the loan on your name? If not, then talk to them.
