We just tried M&I bank for a single closing new construction loan. They told us they stopped offering them a few months ago and have a standard ARM bridge loan available.

First, shouldn't I be looking for a single closing new construction loan?

I need a jumbo mortgage. Any other lenders in Wisconsin I should try?

You can contact other lenders located in your area and check out if they can help you with a single closing new construction loan. If you do not get such loans, then you can take out a standard ARM bridge loan. It is same with the jumbo mortgage as well. You should speak to the lenders of your locality and apply for it. This community, too, has a large number of lenders. You can speak to them and seek a no obligation free mortgage consultation. This will help you know whether or not you will qualify for a mortgage.
